We have a whole gaggle of newborn baby goats, and with them comes milk and, in two more months, cheese! Along with the Colby, this year we will be offering a marinated chevre and a white-mold ripened cheese we have called "Roving Rind". We've also just about got our pasteurizer all hooked up, so there may even be some chevre before then... Keep an eye out for us at the farmers' markets!

A belated Merry Christmas and a Happy New Year to you all! It's been a good off-season, and we're keeping busy. We've got a pasteurizer and bulk tank to put into place, so we'll be able to sell fresh cheeses in the coming Spring and Summer. Our temperature control apparatus is improving, as well, so we'll be able to try some things that require too stable an environment for us to try before (like a Brie-style cheese, my personal favorite). We'll keep you posted as that happens!

Winter brings with it down time for the farm, so we'll be experimenting with cheese flavors and types to figure out what we like best. In the meantime, we'll also be experimenting with our layout here--feel free to leave feedback either by emailing us (at info@whiteoakdairy.com, for example), or to use the Olark chat in the bottom right!

Anna and I have tied the knot, to become Aaron Bedell Wilson and Anna Bedell Wilson. We'll be sporting our fancy new rings the next time we bring you cheese!

We've made several specialty wheels so far, including a garlic wheel (with extra garlic--did I mention it has garlic?), the previously mentioned wasabi wheel, and a savory wheel that turned out to be the best cracker cheese we've made yet. If any of these sound delicious, well, you'll have to wait until a new one matures, because we've already sold out of all three! Don't worry, cheese fans, more is definitely on the way.

Today we sold completely out of our first certified wheel of cheese at the Botetourt Farmers' Market in Daleville! We plan to be there as many weeks as we can make it, with as much cheese as we can produce. Today was only our regular Colby style cheese, but in the near future we plan on bringing some more exotic tastes, like garlic, horseradish, and wasabi. Hope to see you there!

We're both pleased to announce that we are certified to sell certain raw milk products, which includes goat milk fudge, dulce de leche and semi-soft and hard cheeses! This went into effect Wednesday, June 3rd, just in time for us to produce some tasty victuals for the Magic in the Mountains festival in Clifton Forge on the weekend of June 19th. We hope to see you there!

It seems like the guys at Google have the right idea! They decided that, rather using lawnmowers, they would use goats to mow their lawn.
